I think Liu Kang loves Kitana, but sometimes he can't remember it.
MK2/MK Movie - Liu fell in love with Kitana MK3/MK Annihilation - Liu met Jade MK4 - Liu met Tanya Maybe Kang loves Kitana, but sometimes spends time with other girls. Liu Kang & polygamy?

Ok, my mistake, but I see Liu Kang has more female friends in movies. No Kung Lao in movies (MK Movie & MK Annihilation). Liu doesn't talk a lot with Cage or Jax in movies.
Liu Kang loves Kitana and I'm sure it. He is naive - relationships with other ladies. Jade in Annihilation makes Liu to trust her. Tanya in MK4 (Tanya's ending) makes Liu to trust her. In both situations, ladies show the way to a trap for Liu. "Come with me Liu Kang [..] Can you see Liu Kang? This is a trap!"
